Another simple yet effective side dish. Enhance your everyday potato wedges by cooking them with freshly cut rosemary along with rapeseed and truffle oils. The oil flavour combination subtly blends with the aromatics from the rosemary to create a stand-out side dish.
I made some focaccia a while ago. It was pretty good and tasted pleasant with some balsamic vinegar dipping sauce. How to improve on this? Add some bacon! Or in this case, delicious smoked pancetta. And throw a few vine-ripened cherry tomatoes in for good measure.
At a recent dinner party, we were served Beef Tagliata. An Italian dish of slices of rare steak with shaved Parmesan cheese and rocket salad, it is accompanied by a dressing with rosemary, garlic and lemon. And it was wonderful.
I was so impressed that I had to try making it at home. Served with a bottle of Fitou, this was (and still is) a meal to remember.
