Home-Baked Bloomer Loaf

2-3 hours preparation
25-30 mins cooking
One 900g loaf or two 450g loaves
Meats and preserves

This recipe requires minimal kneading … three 15-second kneads, let the dough rise, bake and enjoy. It’s perfect for hectic home life – a quick knead and then go do something else. Read a book, play a game, pump some iron, whatever.

  • Baking tray or pizza stone
  • Kitchen scales
  • Measuring jug
  • Mixing bowl
  • Timer (kitchen, phone app)
An inexpensive water sprayer is invaluable when baking most breads. It’s used to moisten both dough and oven. Available online (our recommended sprayer) or in hardware stores.


  • 600g strong white bread flour
  • 400ml warm water (300ml cold + 100ml boiling)
  • ½ sachet dry instant yeast (or 1 tsp from a jar)
  • 1 tsp table salt
  • 1 tsp sugar
  • 1 tsp olive oil
All that is needed to make a loaf of bread ... except a baking tray


  1. Put dry ingredients in bowl. Add water, mix together into a wet dough. Cover bowl.
  2. Rest the dough in the bowl for 20 mins.
  3. Stretch and knead dough on lightly oiled surface for 15 seconds. Return to bowl, cover.
  4. Repeat previous two steps twice on a floured (not oiled) worksurface.
  5. Return to bowl, cover, leave until dough has risen 50%.
  6. Turn onto floured worksurface, knead and shape into a rounded brick by rolling a little. If making two small loaves split the dough in half, shape into two small rounded bricks.
  7. Place seam side down on floured baking tray (or baking parchment if using a pizza stone). Cover, leave until risen by 50%.
  8. Preheat oven to 200°C (220°C for non-fan, using non-fan is recommended). Or hotter if using a pizza stone.
  9. Score the top of dough with knife down the length of the dough.
  10. Add moisture to the oven (very important).
  11. Bake for 25-30 minutes at 200°C fan/220°C non-fan, until the crust is a golden brown.
  12. Cool on a rack.
A decent crumb, not too tight, so butter can melt into it

Hints, Tips and Pictures

  1. Cover the bowl with a kitchen cloth, plastic bag, shower cap or plate. This prevents the dough from drying out.
  2. Kneading can be explained in many paragraphs  … or more simply by watching a youtube clip.
  3. During the second rise (or proving) stage, watch the dough, not the clock. Volume change is the key factor.The time for this stage varies with the ambient temperature of the room, normally between 30 minutes and an hour. It will probably be quicker during the summer months.
  4. Use the following steps to form the shape before proving.
  5. Score the top before baking by doing this:
    Score the centre of the dough quickly with a very sharp knife ...
    ... then spray the dough to keep it moist during baking

    Did 1st pass on this without a water sprayer and put water in skillet not ice cubes. Turned out good but would have liked a slightly more cruncy crust.

    Trying again today with sprayer and also using ice cube in skillet.

    1. The ice cubes are a substitute for water, they can be easily thrown onto the base of the oven from a distance, i.e. a safe way of delivering water into the oven. The main thing with water for a crunchy crust is to make sure that the water has be expunged after the dough has a solid outer crust, which is normally 10-11 minutes in. If there is still water left in your pan, remove the pan.
